Eating around the world

Few things top trying new and different food in other countries. I was fortunate enough to serve in the U.S. Air Force for 29 years and during that time, I spent a lot of time on the road and living in other countries. I tasted food in Africa and South Korea and Kosovo and the United Arab Emirates.
Amazingly I never got sick from anything I ate outside of the U.S. -- even when I had spaghetti with camel meat sauce in Djibouti, Africa. By the way, that's me in the picture here and it tasted like beef.
Anyway, I plan on putting some of the recipes here that were inspired by my travels. It didn't really dawn on me that I might be cooking a little above average until I had one of my girlfriends over for dinner when I was stationed in Washington, D.C.
My girlfriend Chyenne is married with two boys and she came to spend the night at my place. I can't even remember which dish I made, but as I was describing it to her, she looked at me like I was speaking in another language. "What?" I asked her.
She said, "I can already tell you that I'm sorry." I asked her why. She then said that she would make me spaghetti and that's about it. It was too funny. Not that she wasn't a good cook; it's that I really didn't think what I made for her was that special. She would beg to differ.
So here I want to share some recipes that I've made my own over the years. I love variety. I love tapas -- you know, the little plates of food that allow you to sample more than one thing. I love experimenting with ideas. I also rarely measure anything, so that will be something new for me as I attempt to create the recipes.
